Eggless, milkless, butterless cake

INGREDIENTS:
1 cup brown sugar
1 1/4 cups water
1 cup raisins
1/3 cup shortening
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups all-purpose flour
5 teaspoons baking powder

DIRECTIONS:
In a saucepan, combine brown sugar, water, raisins, shortening, nutmeg and cinnamon. Bring to a boil, and continue boiling for 3 minutes. Remove from heat and allow to cool.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together flour and baking powder.
In a large bowl, combine the raisin mixture with the flour mixture. Pour into prepared pan.
Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.

coca angel food cake
11/2 cups egg whites( about 12 egg whites)
3./4 cup shifted whole-wheat pastry flour or shifted unbleached
flour.
1/4cup unsweetened coca powder
1 teaspoon cream of tartar
1 teaspoon of vanilla
1/2 cup of honey
place egg whites in 5 or 6 quart bowl let stand 30 min room temp
shift the flour and coca powder togher 4 times set aside
using a electric mixer beat egg whites on high speed until foamy. add the cream or tarter and vanilla. the beat on medium speed until the egg whites form soft peaks. and add honey,1tablespoon at a time,and continue beating on med speed
until the egg whites form stiff peaks but not dry. shift the flour mixture over the egg whites and fold in using a wire whisk or large spatula.repeat shifting and folding in the flour 3 more times spoon the batter into a uncreased tube pan with a removable bottom. bake at 350 for 30 to 35 min or until the cake springs back when lightly touched invert the pan onto a wire rack and let cool for at least 1 1/2 hours remove the cake from the pan slice and serve with fresh fruit and enjoy

The best thing to do in any box cake is to sustitute applesauce for the oil. Being a diabetic, I don't think there is such a thing as healthy cake, doll:)

Try carrot cake. Use whole wheat flour and applesauce for the butter.

Substitute oil or butter with applesauce..makes cake moist..low fat and delicious...
