Pork Chop Marinade

This is a great Asian style marinade that works on all cuts of pork, particularly pork chops.

INGREDIENTS:
1/2 cup soy sauce
1/4 cup sake
2 tablespoons brown sugar
1 tablespoon chili sauce
1 garlic clove, minced
1 pinch ginger

PREPARATION:
Combine all ingredients and mix until smooth. Store in air tight container in refrigerator until ready to use. Makes about 4 cups or enough for about 6 pork chops.

I made this last night and tastes really good.

1/2 cup apple juice
1/2 cup beef stock
1/4 cup teriyaki sauce
1 teaspoon cooking wine
1 kiwi, skinned and chopped

Mix all ingredients in a blender or food processor. Pour in a zip lock bag with pork chops and marinade for a minimum of 3 hours. Turn the bag every 30 minutes for the pork chop to get the flavor.

Ginger Marinade
6 tablespoons lime juice
3 tablespoons honey
2 tablespoons rice wine vinegar
2 tablespoons olive oil
1 1/2 teaspoons chopped cilantro
1 teaspoon grated ginger root
1/4 teaspoon red pepper flakes

Whisk all ingredients until combined.

Pork Chop Marinade
1 c. soy sauce
1/4 c. honey
1 clove garlic
1/2 tsp. ginger

Marinate overnight. Makes enough to grill 12 pork chops. Also good for chicken.

Citrus Pork Marinade
1 cup salsa
1/2 cup lime juice
1/2 cup beer or water
2 cloves garlic, minced
1 tablespoon snipped cilantro
1 1/2 teaspoons ground cumin
1/4 teaspoon ground red pepper
1/4 teaspoons black pepper

Combine ingredients, pour over pork and refrigerate for 3 to 4 hours before cooking. Enough for about 1 1/2 pounds.

APPLE GINGER MARINADE

--------------------------------------------------------------------------------

1/4 c. apple juice or cider
1 tbsp. minced fresh ginger or 1/4 tsp. powdered
1/4 c. cider vinegar
1/3 c. salad oil
1/3 c. soy sauce
1/3 c. honey
2 cloves garlic, crushed

For beef, pork, lamb, poultry. Marinate 2 to 3 hours. Barbeque as desired.

ZESTY GRILLED PORK CHOPS

--------------------------------------------------------------------------------

3/4 c. soy sauce
1/4 c. lemon juice
1 tbsp. chili sauce
1 tbsp. brown sugar
1 garlic clove, minced
6 rib or loin pork chops (about 1 /2-inch thick)

Combine the first five ingredients. Place chops in a glass baking dish and pour marinade over. Cover and refrigerate 3-6 hours or overnight. To cook, remove chops from marinade and grill or broil 4 inches from the heat to desired doneness. Brush occasionally with the marinade. Yield: 6 servings. These pork chops make a quick company dish. Our family enjoys them on the grill, as the simmer weather in our part of the country is hot and muggy. In the wintertime, they're wonderful prepared in the broiler.

I use just pain old Italian dressing. Another thing I love on pork chops is lemon-pepper. Great on chicken as well. Happy cooking.
