New York Strip is really good wih peppercorn sauce.
This is a really good recipe...I've had it numerous times and it's fabulous!

4 steaks 1-1 1/2 inches
1/3 cup minced shallot
1 clove garlic minced
1/4 cup cognac
2 cups brown stock or canned beef broth
1 tablespoon black peppercorn, coarsely crushed
1/3 cup heavy cream
4 teaspoons cornstarch
2-3 teaspoons Dijon mustard

Cook steaks and keep them in one layer in skillet. Remove steaks from skillet and skim all but 1 tablespoon of the fat from the pan juices in the skillet. To skillet add, shallots and minced garlic and cook them for 1 to 2 minutes until softened. Deglaze with Cognac, scraping up bits which cling to skillet. Add stock or canned beef broth and peppercorns. In a small bowl combine cup heavy cream and cornstarch. Whisk cornstarch mixture into sauce and simmer until lightly thickened. Whisk in mustard and pour juices from plate into pan.

To paraphrase Steven Raichlen, the BBQ Professor, if it tastes good sauteed or fried, it probably tastes even better grilled. So I second the recommendations from others to grill this steak. Nothing beats that grilled flavor.

With such a beautifully aged steak, it would be a shame to cover up that nice beefy flavor with anything else. You want to enhance the flavors, not cover them up with something else. Steak sauces or fancy seasonings often just mask the natural flavors of the cooked meat. In fact, I suspect that steak sauces were created to disguise old meat. So I suggest you season it very simply with a generous dash of salt and freshly cracked black pepper and just enough olive oil to coat both sides with a thin layer of oil to help the s & p stick to the meat and put a nice brown sear on the meat when you grill it.

Don't be afraid to give your meat the poke test (with your finger, never with anything sharp that will drain the natural juices out) while you're grilling it. Especially if you like your steak medium rare or rare, you don't want to overcook it.

Serve it with a twice-baked potato, grilled asparagus and onions and/or a fresh green salad. Finish up with some grilled pineapple with rum sauce over vanilla ice cream. You could literally cook your whole meal on the grill and save on washing dishes and cleaning your kitchen afterwards. Have fun!

I don't think I've ever had pepper sauce. However, the best steak to cook is filet mignon. It needs no sauce if cooked properly. :)

Rib-Eye gotta like hot stuff pepper sauce sets on the table with all the spices.

A good rib-eye is my favorite cut of steak. If available in your area (Kroger has it) get Nolan Ryan beef. It is the best.

I say sirloin, it has the stronger flavor that still stands out when paired with something like pepper.
