Blackened Mahi Mahi Salad with Lemon Pepper Vinaigrette

6-8 oz. Mahi Mahi
1 once olive oil
1/2 Tbsp. old bay
2 Tbsp. blackening seasoning
Lemon Pepper Dijon Vinaigrette
4 oz. olive oil
4 oz. white vinegar
2 oz. brown sugar
Juice of one lemon
1/4 tsp. of lemon zest
1 Tbsp. minced red onion
2 oz. Dijon mustard
1 garlic clove, minced
Fresh ground pepper to taste
Blackened Mahi Mahi
1. In large bowl whisk together well olive oil, blackening seasoning, and old bay, add seafood and marinade in refrigerator for 20-30 minutes.
2. Sauté in medium skillet over high heat until fish is flaky but not overcooked. Serve atop wild greens and add your choice of curtailments. Chef’s choice would be fresh garden tomatoes, cucumber, red onion, and lemon wedges.
Lemon Pepper Dijon Vinaigrette
1. Combine all ingredients and whisk together thoroughly. Will last up to 4-6 weeks if kept well refrigerated.

Grilled Mahi Mahi with Spiced Butter
2 pounds Mahi Mahi fillets
1 cup unsalted butter
2 tablespoons cilantro, finely chopped
1 jalapeno pepper, finely chopped
3 cloves garlic, minced
1 teaspoon ground ginger
In a mixing bowl, beat softened butter until fluffy. Add cilantro, jalapeno pepper, garlic, and ginger and blend thoroughly. Grill fish on a rack about 6 to 8 inches from hot coals for 4 to 5 minutes per side. Place a dollop of butter on each fillet and serve immediately. Makes four to six servings.

Greek-Style Marinated Mahi Mahi Recipe
Found on a recipe card in the grocer's.
1 1/4 lbs mahi mahi fillets, fresh or thawed, about 3/4 to 1 inch thick
1/2 cup lemon juice
1/2 cup olive oil
3 tablespoons fresh oregano, chopped
3 tablespoons fresh mint, chopped
1 teaspoon bottled minced garlic
1 teaspoon finely shredded lemon peel (zest)
1/4 teaspoon salt
4 servings
18 minutes 10 mins prep
Rinse fish; pat dry with paper towels. Cut fish into 4 serving size pieces (this is easier if fish is slightly frozen). Place fish in a resealable plastic bag. Stir together lemon juice, olive oil, oregano, mint, garlic, lemon zest, and salt. Pour over fish. Seal bag. Turn to coat fish with marinade. Marinate in refrigerator for at least 30 minutes.
Drain fish, reserving marinade. Grill fish over medium heat for 8 to 12 minutes or until fish flakes easily when tested with a fork (145 degrees F), turning once and brushing with marinade halfway through grilling. Discard any remaining marinade.

Macadamia nut: a small, two-kernel nut that almost tastes like almond. Mahi-mahi is also called dolphin, dolphin-fish, dorado [sea bream]. One of the most delectable fish in the sea, this fish bears no resemblance or relation to the marine mammal called dolphin or porpoise. The Hawaiian name mahi-mahi is used to prevent confusion. Mahi-mahi is a beautiful fish, blue and gold or green and gold, and is highly prized as a game fish. It is very easy to distinguish the male or 'bull' mahi-mahi by its blunt, almost squared-off head profile. Mahi-mahi is typically sold, fresh or frozen, as steaks or fillets. Mahi-mahi fillets may be recognized by the row of red spots in the flesh.
Plan to buy 1/3 pound [150 g] fillets or steaks per serving.
Mahi-mahi has firm, large-flaked, sweetly moist flesh. For the mildest flavor, remove the skin and cut away the dark, lateral line before cooking.
It may be prepared by virtually any method.
Servings: 4
1 1/2 pounds [680 g] mahi-mahi fillets
Salt, to taste
Freshly ground pepper, to taste
1 cup [250 mL] salted macadamia nuts
1 cup [250 mL] unsweetened coconut milk
Preheat oven to 350°F [180°C].
Rinse and pat dry mahi-mahi.
Cut fish fillets diagonally into 4 [1-inch / 2.5-cm wide] pieces.
Arrange pieces into a 12 1/2 x 8 1/2-inch [32 x 22-cm] baking dish, into a single layer.
Rub fish with salt and freshly ground pepper.
Sprinkle half of macadamia nuts onto fillets.
Pour unsweetened coconut milk all around fillets.
Bake into preheated oven for 18 minutes, until opaque.
Chop remaining nuts; sprinkle over fillets.
Serve immediately.
