I always thaw boneless and bone in chicken a few hours before I have to use it in a bowl of warm water. We buy ours from a meat service and it comes frozen. Just keep changing the water out every 15 min or when you touch the side of the bowl it feels cold. This ensures that the flow of heat and cold from chicken and water is continuous and the chicken thaws quickly.
Also make sure that you seperate the chicken, if thawing several frozen packets of chicken, as it thaws. When doing this method it has a tendancy to stick together and that impeeds thawing.
Do this and it should thaw within a few hours. Any quicker than that is dangerous. Dont thaw in microwave.

depends on how quickly you want to thaw it out.
1) you can put it in a bowl in the sink and run water over it. The important thing is that you need to have a constant flow, and the water needs to be able to run down the drain.
Or,
2) stick it in the microwave on defrost.
Whatever you do, never just let it sit on the counter to thaw. If you don't do one of the above methods, just put it in the fridge and let it thaw out slowly there.

YOu could fill your sink with cold water and place the chicken in it. Or just defrost in the microwave. I don't know if experts say these methods are safe, but I have used them and haven't killed anyone yet! As long as you cook it as soon as you thaw it in microwave I think its ok.
