A frosting made with cream cheese:-

8 oz cream cheese (room temp)
1/4-pound butter
16 oz icing sugar
A few drops of vanilla essence (not flavouring)
If you need to make it more spreadable try adding runny honey

Caramel. Here's my recipe:
3/4 Cup granulated sugar
3/4 Cup brown sugar
1/2 Cup cream (liquid coffee creamer is fine)
1 Tbl Spoon butter

Cook sugar and cream until it forms a soft ball when a spoonful is dropped in cold water; Remove from stove, add butter and beat well before spreading on cake.Put on both layers or if you have a 1 layer cake it will work also. The cake will stay moist for several days.
