Reba McEntire's Broccoli Casserole

Makes 6-8 servings

1 head fresh broccoli; chopped
1 can cream of mushroom soup; undiluted (10 3/4 oz)
1 can water chestnuts; sliced (8 oz)
1 jar cheez whiz; (16 oz)
1 cup raw minute rice
1 cup cracker crumbs

Preheat oven to 375 degrees F. Steam broccoli just until crisp. Drain. Mix broccoli, soup, water chestnuts. Cheez Whiz and rice. Place in greased 2-quart casserole. Top with cracker crumbs. Bake 20 to 30 minutes, or until bubbling

The following 20-minute dish was developed using quick-cooking brown rice (I prefer Uncle Ben's brand). If you do not have a microwave oven, steam the broccoli until tender. The smoked gouda cheese compliments the flavors of the broccoli and walnuts, but if it is unavailable, you may substitute Cheddar cheese.

Brown Rice with Broccoli, Cheese, and Walnuts

1/2 cup coarsely chopped walnuts
1 tablespoon butter or margarine
1 large yellow or sweet onion
1 large clove garlic, minced or 1/2 teaspoon bottled minced garlic
1 cup quick-cooking brown rice*
1 cup chicken or vegetable broth
1 bunch broccoli (about 1 pound)
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper, or to taste
4 ounces smoked Gouda or sharp Cheddar cheese
Heat oven or toaster oven to 350 degrees. Place walnuts on a small baking sheet and bake for 6 to 8 minutes or until toasted.

While nuts are toasting, melt butter in a medium saucepan over medium heat. Coarsely chop onion. Cook onion and garlic in butter for 3 minutes, stirring occasionally. Add rice and stir. Add broth and bring to a boil. Reduce heat to medium-low, cover and simmer until liquid is absorbed, about 7 to 8 minutes.

While rice is cooking, cut broccoli into florets and slice stems thinly. Place in a microwave-safe casserole or dish and sprinkle with salt and pepper. Cover and cook at high power for 5 to 7 minutes or until tender. While broccoli is cooking, shred cheese.

Spoon rice onto a serving platter and top with broccoli. Sprinkle walnuts over broccoli and top with cheese.

The chewier texture of long-cooking brown rice and have the 45 to 50 minutes of cooking time it requires, you may substitute 3/4 cup of regular brown rice for the quick cooking and increase the broth to1-1/2 cups.

Makes 4 meatless main-dish or 8 side-dish servings.

Broccoli Rice Bake

2 sticks margarine
1/2 cup onion, chopped
10 ounces broccoli, frozen
1 can cream of chicken soup
1 pound Velveeta cheese
1-1/2 cups rice, cooked
1 package Townhouse or Ritz crackers

Serving Size : 4

Sauté onion in one stick of margarine until clear and tender. Add drained, cooked broccoli, soup (with no water or milk added), cheese and rice. Blend well. Put in greased 1-1/2 qt. casserole dish. Melt the other stick of margarine; crush crackers into margarine and mix. Spread cracker mixture over casserole. Bake at 350 for 45 minutes.

This has rice

1 bag of broccoli
1 bag mahatma yellow rice
1 can cream of mushroom soup
1 package sharp cheddar cheese

Cook the rice according to the package directions. Steam broccoli or saute in a pan with a little bit of butter. When the rice is done stir in the cream of mushroom soup and then add broccoli. Layer in a casserole dish with cheddar cheese. Depending on how deep the dish is you can make 2 layers

Bake at 350 for 30-35 minutes

I have a recipe from Kraft for broccoli, rice and cheese cups. Not sure if this is what you want, but I like it because it's fast, easy and it's your starch and vegetable in one dish. :)

1 cup MINUTE Rice, uncooked
1 cup chicken broth
1-1/2 cups frozen chopped broccoli, thawed, drained
2/3 cup Shredded Mozzarella Cheese
1/4 cup Ranch Dressing
2 eggs, lightly beaten

PREHEAT oven to 350°F. Prepare rice as directed on package, substituting chicken broth for the water. Place cooked rice in large bowl; cool slightly.

STIR in remaining ingredients until well blended. Spoon mixture evenly into 8 greased medium muffin cups.

BAKE 25 min. or until lightly browned.

I've never made one, but what would sound good to me is Elbow macaroni, velveeta cheese, milk, and broccoli. Cook pasta. Melt velveeta and milk together (I don't know the exact amounts) and flour too(to help thicken it), Cut up some broccoli. Mix everything together in a casserole dish, cut up some extra velveeta (or even cheddar cheese) and sprinkle on top, put in the oven until the cheese has melted on top.

Puffed Broccoli Cheese Casserole
Yield: 8 Servings

Ingredients

1 cn cream of broccoli soup
1 soup can milk
1/4 c flour
1 ts dry mustard
1/4 ts ground red pepper
2 c shredded Cheddar cheese
4 lg eggs; separated, whites at
-- room temp
10 oz frozen chopped broccoli or
-cauliflo
-- thawed, dried OR
-- equivalent fresh,
-parboiled-

Instructions

Heat oven to 350 F. Lightly grease an 11x7" baking dish. Mix soup, milk,
flour, mustard and pepper in 3 quart saucepan until blender. Stir over
Med-High heat until almost boiling. Remove from heat. Add cheese and stir
until melted. Stir in egg yolks and broccoli or cauliflower until blended.
Cool slightly. Beat egg whites in a medium bowl with electric mixer until
stiff peaks form when beaters are lifted. Fold into broccoli mixture .pour
into prepared dish. Bake for 50 minutes until top is golden and puffy and a
knife inserted in center comes out clean. Cool for 5 minutes before
serving.


Broccoli-Cheese Casserole

Ingredients

1 c long-grain white rice
2 10 oz. pkgs. frozen chopped
-broccoli; thawed & drained
1 cn cream of mushroom soup,

1/2 c skim milk
1/4 c butter or margarine
1 tb dry onion soup mix
1 8 oz. jar Cheez-Whiz
1/2 c cheese cracker crumbs

Instructions

Cook rice per package directions, omitting salt & butter. Set rice
aside. Combine broccoli and next 4 ingredients in a large skillet.
Bring mixture to a boil over medium heat, cover, reduce heat, and
simmer about 10 minutes. Stir in Cheez-Whiz until melted, then add
cooked rice. Spoon into lightly greased 2-qt. baking dish. Sprinkle
with cracker crumbs. Cover and bake at 300 degrees for 30 minutes.


Broccoli-Swiss Cheese Casserole
Yield: 8 Servings

Ingredients

5 c chopped fresh broccoli
1 ct {24 oz.} cottage cheese
3 eggs
1/4 c butter or margarine; melted
1/3 c all-purpose flour
1 cn {8 3/4 oz.} whole kernel
-corn; drained
2 c shredded Swiss cheese
1/4 c finely chopped onion
1/2 ts salt
1/4 ts pepper
4 dr hot sauce
8 sl bacon; cooked and crumbled

Instructions

Cook broccoli, covered, in a small amount of boiling water, 10 minutes
or until tender; drain.
Combine cottage cheese, eggs, butter, and flour in container of an
electric blender; process until smooth. Set aside. Combine broccoli, corn,
and next 5 ingredients in a large bowl; stir in cottage cheese mixture.
Spoon
into a lightly greased 12 x 8 x 2-inch baking dish. Sprinkle bacon over
casserole. Bake casserole at 350 degrees for 45 minutes.
