Besides visiting the Eiffel Tower (the best view is the second level), there are a plethora of places in Paris to visit.
I would suggest starting off with an introductory bus tour (Paris Vision or Cityrama...both on Rue de Rivoli, across from the Louvre and Tuileries Garden). Both companies offer a historical commentary via headphones. It's a good way to become familiar iwth the city and to decide where you want to visit.
That being said, no visit is complete (in my humble opinion) without visiting the following: The Louvre, Musee d'Orsay, Rodin Museum, Napoleon's Tomb at Invalides, Notre-Dame Cathedral, Sacre-Couer Basilica, Montmartre (see the artists at Place du Tertre), stroll along the Seine River at sundown, Sainte-Chapelle (beautiful stained glass), Shakespeare & Company bookstore, souvenir shopping on Rue de Rivoli, Pere Lachaise Cemetery (Jim Morrison, Chopin, etc), the flea market at Porte de Clignancourt, nibble on a crepe purchased from the stand near the Eiffel Tower, a nocturnal cruise on the Seine, Versailles palace.
I'd perhaps skip Disneyland...there's so much more to see rather than riding a Dumbo elephant ride. Besides, Orlando's is much better! *wink*
If you plan on using the Metro (highly suggested), purchase a carnet of 10 Metro tickets. If you're going to be there for a week, get a Carte Orange (Mon-Sun). It's cheaper than continuously buying Metro tickets. If you're big into museums, get yourself a museum pass (available in 2-, 4-, and 6-day passes). Lets you bypass enormous lines.
Another great way to spend time in Paris is to slip into a cozy cafe and people watch while sipping a glass of wine or a cup of chocolat chaud.

man, you chose the height of the tourist season, its going to be tough to see the main attractions like the louvre, you can certainly plan on waiting a couple hours at least to get in there, versaille is amazing and probably easyer to get into without waiting so long, Montmartre is a really nice part of town with a great view over paris, the orsay museum is worth the wait in my opinion, so is Notre Dame, but anyway, you'll probably end up chosing when you get there if you really want to wait two or three hours to get in. Enjoy
