Mix together
3/4 cup sugar
1 tbsp cornstarch
1/4 tsp nutmeg
1/4 tsp cinnamon
Pinch of salt
Add to 6 cups of sliced peaches
1 tbsp lemon juice
1/4 cup water
Place in a pie dish and cook in a pre-heated 375-degree oven for 30 minutes if the peaches are fresh, 15 minutes if canned.
While that cooks, mix together-
Dry ingredients-
1 cup flour
2 tbsp corn meal (helps keep the outside crispy)
1/4 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Wet ingredients-
1/2 cup milk or buttermilk
4 tbsp melted butter
1 tsp vanilla
Blend together wet and dry ingredients. This is basically a "drop biscuit" recipe. When you remove the peaches from the oven, "drop" tablespoon-full amounts of the mixture on the surface of the peaches. You don't have to completely cover it. As a matter of fact is preferable if you don't.
Return to the oven and allow to cook for about 18 minutes, or until top is golden-brown.

4 cups peeled, sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self-rising flour
1 1/2 cups milk
Preheat oven to 350 degrees F.
Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.
Put the butter in a deep baking dish and place in oven to melt.
Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Batter will rise to top during baking. Bake for 30 to 45 minutes.
To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.
