To keep its unique sniffing ability at its peak ! It breathes faster, and more of air circulation would cause faster evaporation of water at nose , reducing the sniffing ability. To offset this nature has granted wet nose.

The canine nose is normally cool and moist, but not always wet. It has no
sweat glands; the moisture is caused by the mucus lining.
Incidentally, do not believe the folklore that the wetness of a dog's nose
is an indication of the dog's health. A dog's nose can be wet, moist or
dry at any given time. If there is any indication that the dog is sick
(such as a mucus discharge) you should take the animal to see a
veterinarian.

Conversely, a dry nose doesn't always signal illness. Dogs just waking from sleep often have a warm, relatively dry nose. And, some dogs, like bulldogs, just have dry noses that even chap and crack.
Despite what many people think, you cannot determine your dog's temperature by feeling his nose. A warm nose does not mean your dog has a fever. Only a properly used thermometer can tell you that. So remember, if your dog shows discomfort, lethargy or loss of appetite, you'll need to have your local vet examine him, regardless of the condition of his nose.
If you see a nasal discharge, swelling, or detect unpleasant odors emanating from your dog's nose, or if he has difficulty breathing, get him checked out right away. It could mean the presence of a foreign object, tumor or infection.

The moisture from the nose helps cool the dog. Another is that added moisture in the nose makes the dog more sensitive to odors. The most boring answer is that many digs simply lick their noses with their tongues, thus wetting them.

Show me a dog with a dry nose and I'll show you a dog who hasn't licked his nose in a while! In other words, dogs always have wet noses because they are always licking their own nose. It has nothing to do with health -- that is an old wives tale.

oftentimes cold, wet dog nose? Blame the confusion on one gland -- the lateral nasal gland. A small organ ... well, then most likely the dog is healthy -- warm nose or not ...www.paw-talk.net/forums/printthread.php?t=4910
