The kind they love to bite....lol... Okay, I'm sorry. But that was funny wasn't it...lol...
Now seriously, most catfish love an easy meal and thier olfactory nerve is better than most fish. This isn't to say that it's all they use... but most spieces of catfish like some smell, eud de fish funk!! Chicken livers and blood baits are common, but shad give off a great oil that channel and blue cats both love. Personally, I use brim that are about hand sized and I back hook them.... right ahead of the dorsal fin... and chicken quarters.... both on 0000 stainless steel hooks.... Granted I am going after big.... no I mean really big cats on the Cape Fear River.... 45 plus pounds.
I have found that most are the most active at night.... usually between midnight and sunrise... we catch more and larger fish in the wee hours that we do at any other time.

For channel catfish i would have to say chiken liver,not the prepackaged junk immitations from the baitshops.

Corn, sweet corn. Preferable soft from a can. Rich on smell and easily sucked in.
