they are still good, they should have a sell by date on them and usually you can still eat it a few days after that.

They might be ok. Take a whiff and if you smell anything "off" they toss them. If they smell ok, make sure to cook them to well done, and not medium or rare.
I'm not sure exactly how long raw beef lasts.

As long as they have been refrigerated they should be okay. Generally the rule is 3 days but it should be fine, just don't chance it by waiting another day.

Also depends on how long the butcher had it. Hygiene of your fridge. Health of the animal... etc.
I'd wager a guess and say, it will not kill you.
If you made a stew you should be OK.

If you freeze them they will stay good for a year.
Chicken will be good for 6 months frozen.
