Additional cocoa butter and sugar are added to make eating chocolate out of unsweetened chocolate.Dark chocolate is a broad term connoting eating chocolate that has no dairy mixed into it. Within this category are various types of chocolate defined by the amount, by weight, of chocolate liquor (i.e., unsweetened chocolate) they contain. The lower the percentage of chocolate liquor, the higher the percentage of sugar, and the sweeter the taste.Sweet chocolate contains at least 15 percent chocolate liquor. According to the federal government, semisweet and bittersweet both contain at least 35 percent chocolate liquor, but in the marketplace, semisweet chocolates tend to be sweeter than bittersweet.

Unsweetened chocolate has no sugar, it's not sweetened at all. Bittersweet is slightly less sweet that semi-sweet; most chef's I believe prefer to use bittersweet over semi because it isn't as sweet, and has more flavor. I believe 'semi-sweet' is the most popular, and the most readily available in supermarkets, as bittersweet can be harder to find. When I make a recipe using chocolate, I prefer to use bittersweet, but as I stated above--semi-sweet is usually the only one I can find. Unsweetened is totally different from the other two I mentioned. If your recipe calls for 'semi-sweet' or 'bittersweet' you can pretty much use either one of these. YOU CANNOT SUBSTITUTE UNSWEETENED FOR BITTERSWEET OR SEMI-SWEET, THO. Not without adding the extra sugar. Hope that helps..... :)

Well, unsweetened chocolate is just chocolate with no suger, it's not bitter, but not sweet, either. But bittersweet chocolate is EXTRA bitter. The way i think of it, bitter chocoltae is like, in a cave underneath a mountain, unsweetend chocolate is on level ground, and sweet chocoltae is at the top of the mountain. So the difference is this: bitter chocolate is just unsweetend chocolate with extra, well bitterness. I hope it's clear what the difference is, now.
