Chocolate Cranberry Bread Pudding
1 loaf (16 oz.) challah or brioche bread
8 tablespoons melted unsalted butter (1 stick)
2 cups fresh or dried cranberries
1 2/3 cups milk
1 cup heavy cream
scant cup sugar
14 oz. bittersweet or semisweet chocolate
7 eggs
1 teaspoon vanilla extract
lightly sweetened whipped cream or crème fraiche (optional)

13x9-inch glass or earthenware baking dish or two 9-inch glass pie pans, buttered

Serves 12-14
Position the rack in the lower third of the oven. Preheat the oven to 350°F.
Tear the loaves into large shreds, about 2x3/4 inches. To do this, pinch a piece of bread at the top of the loaf and start pulling. If the loaf is sliced, tear the slices. Spread the shreds on a large baking sheet and bake until lightly toasted, about 5 minutes. Remove from the oven and immediately drizzle melted butter over the bread. Sprinkle the cranberries over the bread. Top with remaining bread. Set aside.
In a heavy saucepan, heat the milk, cream, and sugar to a simmer. Off heat, add the chocolate and stir until melted and smooth.
In a medium bowl, whisk the eggs and vanilla. Add the chocolate mixture to the eggs, stirring until well blended. Pour the mixture over the bread, making sure the top layer of bread is completely moistened. Cover the pan loosely with a piece of foil. Bake for 15 minutes. Remove the foil and bake 15 minutes more, or until the pudding bubbles vigorously around the edges although the center is very liquid if the pan is jiggled.
Remove the pudding from the oven (it will continue to thicken) and cool on a rack. Serve warm, at room temp

make a tiramisu. just mix some whipped cream mascarpone and something else that i can't remember right now(don't worry i put the address of a tiramisu recipe to sources). Buy some ready made sponge cake or ladyfingers and soak them with a mixture of espresso and rum. Just make layers of them one after another but the cream layer has to be on top in the end. If you want you can decorate it with chocolate (use a vegetable peeler and make curls). It sounds long and hard but its actually very easy and yummy. I got my own recipe from a book called Mary Barry's Best Desserts or something like that but I don't have it with me right now.

Don't laugh but here is my killer easy dessert recipe.
1 package of chocolate chocolate chip cookies
1 tub of cool-whip
1 glass of milk
crushed pecans
Get a 8x8 dish and layer the bottom with cookies dipped in the milk. Then ad a layer of cool-whip. Repeat two to three times. Chill for at least and hour. Top with crushed pecans!

JELLO DESSERT
1 pkg large jello, any flavor
coolwhip
fresh fruit
Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Put the mix in a glass, and top with more fresh fruit or coolwhip.

Tropical Fruit Cake (Really easy)
Cake:
1 box Duncan Hines Cake Mix (pudding mix)
Instead of following the directions on the box, do this:
½ cup Wesson Oil
1 11 oz can of Mandarin Oranges (save juice)
4 eggs
Mix cake mix, wesson oil, eggs and 2/3 cup mandarin orange juice.
Fold in oranges. Bake at 325 degrees for 25 minutes. Let cool.
After cake cools, poke a few small holes in cake and pour a minimal
Amount of leftover pineapple juice.
Frosting:
1 lg box instant Vanilla Pudding
1 lg can crushed Pineapple (save juice)
1 lg container Cool Whip
Mix pineapple and dry pudding mix together. Add in Cool Whip.
Frost Cake and chill overnight.

Hello,
Cambodian Tapioca-Banana Pudding
INGREDIENTS:
1/2 cup small pearl tapioca
7 cups water, divided
5 medium ripe bananas, sliced
1/4 teaspoon salt
1/2 cup white sugar
3/4 cup coconut milk

DIRECTIONS:
Place 2 cups of water in a microwave-safe dish and heat until warm in the microwave, about 2 minutes. Add the tapioca and let stand for 10 minutes. Drain in a sieve. You'll have a mushy puddle of tapioca left over.
Pour the remaining water into a saucepan and add the drained tapioca. Bring to a boil, then simmer over medium heat until the tapioca begins to turn transparent. Stir frequently to avoid sticking.
When the tapioca is transparent, stir in the bananas, sugar and salt. Simmer for 10 to 15 more minutes, stirring frequently. When the bananas are broken down fairly well, remove from the heat and stir in the coconut milk until well blended. The tapioca pearls will become visible and the pudding will be the consistency of thick soup. Taste and adjust the sugar if desired.
Cool to room temperature or slightly warmer. Stir again before serving.

King Dessert the sweet, commanded all his subjects to eat a small pastry after dinner in his honor. Anyone who did not was boiled in fudge and divided between the peasants. Easiest dessert EVER
Take some berries with their juices and add sugar making a nice berry with syrup combo
Then put on top of some Cool Whip
If you wanna be real fancy add some angel's food cake on the side. YUM!

Chocolate Ganache is easy, and versatile. All you need is (dark) chocolate and (whipping) cream.
Ingredients:
300 g chocolate
300 ml cream
dash of spirit/liqueur of choice (optional) (Cointreau, brandy or rum work well)
Method:
Combine ingredients in a saucepan and gently heat while stirring, until the chocolate is melted.
You can use immediately as a chocolate fondue, or as a rich chocolate sauce to use with fruit, ice cream, etc. It can also be used as an icing or filling for cakes, etc.
If you prepare it in advance, you can whip it once it has cooled and it makes a great chocolate mousse. You can also use it as a filling in handmade chocolates.

This is really easy, and really good.
Place ice cream sandwiches in the bottom of a 13 x 9 in. pan. Spread Cool Whip on top. Sprinkle with peanuts. Repeat layers. Drizzle hot fudge sauce over top. Freeze until ready to serve.
