Why do people yell and scream and shout when a band comes on stage? It's the same reason. The audience is glad to be there, and wants to show the performers (and also the conductor, in the case of an orchestra or large ensemble) that they are glad they (the performers) are there, and that they (they audience) is also gald to be there. It is more just a courtesy to the performing group to clap instead of screaming and yelling and such.
