I found a link and was pleasantly surprised by the answer about table etiquette and how it originated.....
"To avoid reminding those eating of the violence which occurs in order to bring the meal to the table". (Killing the meat, chopping the vegetables.
Then I found this one, very different answer:
"The great houses and castles of England during the middle ages did not have dining tables in the great halls, so tables were made from trestles and covered with a cloth. The diners sat along one side only; if they put their elbows on the table and leant too heavily, the table could collapse".
There were some other explanations too on the second one. On the second site I list below, mentioned right above, it also says something about the sitting straight, no elbows on table rules starting in the Victorian era.
Just a couple of possibilities I came across. :)

I really don't know. I've been at some tables and it's just plain impossible to eat with my elbows off the table.

When you are having a meal you are supposed to sit straight. And if you have your elbows on the table you won't be straight anymore but leaning forward which is not considered as good manners.

That's what my kids want to know! Many manners were created as a secret handshake--a way to separate the classes. This one without any obvious negative repercussions seems to be just that.

It is part of normal good manner. Ignoring it is OK - as long as you don't mind to be the lurch.
Separation of the classes? perhaps. but when in doubt, I prefer to stand up than down.
