The question is funny, but I'll answer it as if it wasn't, just 'cus it's sort of fun to take odd questions seriously.

More than likely the eating of eggs was either imitative, in that other creatures in the wild were doing it and early humans could see that, or it was simply the result of conservation of resources... if they were eating the bird and found the eggs, those were part of the loot after killing the bird, and not to be wasted.

As early man did not have domesticated chickens, the habit of egg-eating undoubtedly came long before the chicken. (Maybe that solves the age-old question of which came first! ;)
