I belive fear of torture is a bit too specific for medical termonology.
However, the root fear of torture in my best estimate would be the fear of "Pain". One of the official terms for a phobia of pain would be Algiophobia.

I was unable to find a term for that, exactly. What i was able to find was fear of painPain- Algiophobia, Ponophobia, Odynophobia or Odynephobia.
.Punishment or flogging- Mastigophobia.
Punishment by a rod or other instrument, or of being severely criticized- Rhabdophobia.
Punishment- Poinephobia.

Panthophobia - Fear of suffering and disease.
Thanatophobia, Thantophobia - Fear of death or dying.
That's all I could find.
