Chunky Garden Gazpacho
Serving Size: 5
Ingredient -- Preparation Method
1 15 ounce can tomato sauce (1 1/2 cup)
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1 med. tomato, cut in 1/2" cubes
1 med. green pepper, chopped
1 sm. sweet red pepper, chopped
1 stalk celery, chopped
1 clove garlic, finely minced
1 cucumber, seeded & chopped
1 scallion, chopped
1/2 teaspoon hot pepper sauce
1/2 teaspoon black pepper
GARNISH: Herbed Garlic Croutons, dollop of plain yogurt topped with finely minced fresh chives, finely shredded lettuce, or minced parsley (optional).
In a medium size mixing bowl, combine tomato sauce, olive oil, vinegar and honey. Stir in remaining ingredients. Top each serving with one of the above listed garnishes. Serve chilled. Makes 4-6 servings.
VARIATIONS: Add 2 T chopped fresh mint leaves; omit hot pepper sauce Serve with a substantial salad, and/or a cheese platter.
Black Bean Gazpacho
Ingredients:
2 1/2 stalks celery -- finely chopped
3 medium tomatoes -- finely chopped
1/3 cup purple onions -- finely chopped
1/4 cup red bell pepper -- finely chopped
1/4 cup yellow bell pepper -- finely chopped
2 whole cucumber -- seeded
2 green onion -- chopped
1 teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon Tabasco sauce
3/4 teaspoon lemon juice
1/2 teaspoon garlic powder
3 cups vegetable juice
2 tablespoons parsley -- chopped
3 cups black beans - washed, cooked
1 tablespoon balsamic vinegar
Combine all ingredients and chill before serving. (We chop all the ingredients up fairly finely)
Serving Ideas: Goes great with a salad or just fresh bread
NOTES : summer vegetables in a spicy tomato base. Serve it chunky or pulse in a food processor for a smoother consistency.
Avocado Gazpacho
Yield: 4 Servings
Ingredients
1 cucumber peeled, seeded,
-chopped
2 garlic cloves; quartered
2 shallots; quartered
1 green bell pepper; seeded,
-roughly chopped
1 c torn lettuce
1 tb chopped fresh dill
1 ts chopped fresh dill
1 tb red wine vinegar
1 c chicken stock
1 avocado
1/2 lemon (juice only)
2 tb vodka
1 salt
1 ground white pepper
Instructions
PLACE THE CUCUMBER, garlic, shallots, green pepper, lettuce, 1
tablespoon dill, vinegar and chicken stock (in that order) in the
container of a blender or food processor. Blend until smooth. Cut the
avocado in half lengthwise. Peel and remove the pit. Roughly chop
half the avocado and add it to the mixture in the blender or
processor. Blend until smooth. Transfer to a medium bowl. Finely chop
the remaining avocado and sprinkle with the lemon juice. Stir this
into the gazpacho; add the vodka, salt and white pepper to taste.
Stir gently and chill thoroughly before serving. Garnish with
remaining chopped dill.

Tomatoes - Gazpacho
serves 4
2 lb/1 kg tomatoes
3 onions
1 lemon
1 clove of garlic
2 red peppers
2 tablespoons oil
2 tablespoons vinegar
salt
pepper
cucumber
pinch of sugar
Wash the tomatoes, peel 2 of the onions, wash the lemon, cut in half and take out the pips.
Remove the inner seeds from the peppers. Liquidise with the garlic, oil and vinegar.
Season to taste with salt, pepper plus a pinch of sugar.
When cooled put in the fridge until cold.
Finely chop the last onion. Serve with finely diced cucumber, tiny pieces of white bread or toast and the chopped onion.
Almonds - White Gazpacho
150 g (6 oz) day old white bread
300 g (12 oz) blanched almonds
3 peeled garlic cloves
5 tbsp olive oil
3 tbsp sherry or red wine vinegar
2 tsp salt
6 grapes
Soak the bread in cold water and then squeeze.
Place the almonds in a food processor and whiz. Add the bread, garlic, oil, sherry or red wine vinegar and salt.
Add 750 ml(1 1/4 pt) water.
Chill for 2 hours.
Add grapes, halved.
Add a splash of olive oil and serve.

I work in a restaraunt that uses gazpacho. Although I don't know the whole recipie I can give you a little. There is small diced tomato, red bell pepper, yellow bell pepper, green onion, red onion, and cucumber. Mix that with some tomato paste and they use ketchup (which I don't agree with). A little salt and pepper, some lemon juice and you're good to go. Does that help? You can also try the internet, they are all pretty similar.

Recipe for Traditional Gazpacho Andaluz
Spanish cold tomato soup which is the perfect starter to a Summer meal. Gazpacho is easy to make and although ingredients may vary according to region, this is the basic Andalusian Gazpacho recipe.
Ingredients (for 4 people):
1 Kilo tomatoes (preferable plum tomatoes)
1/2 small onion (60 grams)
1 small green pepper
1 small cucumber (the small chubby Spanish type)
1 small cup of olive oil
2 desert spoons of vinager
200 grams of bread from the day before, soaked in water
Small portions of diced tomatoes, red and green peppers, cucumber, onion and bread or croutons to sprinkle on top.
Steps:
1: Put the tomatoes, onion, pepper, cucumber, vinager, oil and bread into a liquidizer. If you want to dilute it, add a glass of water. Tip: if you want to go for a tangy garlic taste, add a small amount of fresh garlic to the mixture before liquidizing.
2: Put the mixture into a bowl, add salt and pepper and leave the gazpacho to chill for at least an hour. If you want to eat it straight away, you can put some ice cubes in to cool it down. Gazpacho is a Summer dish which is meant to hydrate and cool down your body. So the colder the better!!
3: Serve the gazpacho en soup bowls, with the portions of diced tomatoes, pepper, cucumber, onion, croutons etc on the table, so that everyone can add them to their bowl as they prefer. Tip: you can also sprinkle diced serrano ham or hard boiled egg.
