Your answer is none. There is never an "always" when making decisions in Blackjack. As a former professional and dealer, I have seen my share of hands. Sure, you can always double on 11 if you want, but do you know why or why not?
The strategy most people quote was originally developed for single deck Blackjack. As the decks increase, the number of ways you can lose your double down increase. Doubling on 10 is not too wise, but it depends on the situation.
If the dealer has a face card showing, you have 11 and are playing a six deck game, it might be best to simply hit. The strategy cards are built for tourists who don't know any better and are gladly distributed by the casinos (at least here in Vegas). It's really meant as a suggestion only and not a hard fast rule.

Well....yes and no to be honest. If the dealer is showing a "bust card" typically 2-6, a double down is a good idea on a 7 through an 11 or if you have a soft 12,13, or 14. If the dealer is showing a 9 or 10 then it may not be a good idea to double on 10 always, then you have to figure in how many cards are left in the shoe and so on...there are a lot of odds when it gets to that point but 10 and 11 for sure are hardly ever bad double down chances.

Nope. It depends on the rules you're playing. At a standard "Vegas" rules blackjack game, you should always double 11, and double 10 against anything but an Ace or a 10. A site like BlackJack Base can generate a Basic Strategy Table for you, showing you the best moves to make.

Not Quite. Basic Strategy says you always double down on 11. Doubling down on a 10 is not advised when the dealer is showing a 10 or A.

10 or 11. That's true because about 16 out of 52 card is worth ten and 4 out of 52 worth 11 point. so the percentage of getting 20 or 21 on a 10 is at about 38.5% and getting less then seventeen (Lowest of high card), is at the same 30.7%. Don't hesitate to double down on 10 or 11 unless your fortune teller says that you shouldn't. Or you got some x-ray vision and see whats on the other side of the card.

There is a concept called "basic strategy" that tells you what plays are correct given the known cards and the odds. You can find a table for basic strategy on the internet. However, your best bet is to pick up a good book on blackjack. My favorite is called Blackjack for Blood, and it touches on a couple different systems for counting cards.

It's kind of a matter of choice, but I only double down on 11 if the dealer has 2-7 showing.

Doubling Down is a tricky call to make... you can never say for sure that 10 and 11 are times to do it. Sure, the odds predict 10 and 11 are the best times, but in order to make sure you aren't wasting your money to double to a 3,4,5,6, you should try to keep a count/true count in your head. Don't get caught counting though, or you'll get tossed by the pit boss.
