Banana Pudding I

Yields: 18 servings
INGREDIENTS:
2/3 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
3 eggs, beaten
2 cups milk 1/2 teaspoon vanilla extract
2 tablespoons butter, softened
2 bananas, peeled and sliced
1/2 (12 ounce) package vanilla
wafer cookies
DIRECTIONS:
1. In medium saucepan combine sugar, flour and salt. Add eggs and stir well. Stir in milk, and cook over low heat, stirring constantly. When mixture begins to thicken, remove from heat and continue to stir, cooling slightly. Stir in vanilla and butter until smooth.
2. In 9x13-inch dish, layer pudding with bananas and vanilla wafers. Chill at least one hour in refrigerator before serving.
Uncooked Banana Pudding

"Dessert in 10 minutes with vanilla pudding mix, bananas, sour cream and whipped topping."
INGREDIENTS:
8 ounces sour cream
1 (8 ounce) container frozen
whipped topping, thawed
1 (5 ounce) package instant
vanilla pudding mix 2 cups whole milk
1 (16 ounce) package vanilla
wafer cookies
4 bananas, peeled and sliced
DIRECTIONS:
1. In large bowl combine sour cream, whipped topping, pudding mix and milk. Stir well. In the bottom of a trifle bowl or other glass serving dish, put a layer of cookies, then a layer of pudding mixture, then a layer of bananas. Repeat until all ingredients are used. Refrigerate until serving.

You can make any pudding with 2 cups of milk and enough corn starch to thicken. I am guessing maybe one tablespoon per cup, add sugar to taste, maybe half of a cup or a little more. Cook and stir constantly until thick. When thick remove from heat and add a teaspoon of vanilla. Then you can add any kind of flavoring you want. Bananas, chocolate, butterscotch chips or anything. If you want a richer pudding use a richer milk such as half and half. For banana pudding line a dish with vanilla wafers, pour in half of the pudding, slice a layer of bananas over the top and then add rest of pudding, top with whip cream, refrigerate for several hours and serve. The whip cream can be added right before serving if you wish.

I use not home made but for my family 2 packs of vanilla pudding mix 4 packs of banana pudding use as directed place vanilla cookies on the bottom of your glass,wait until you are ready to eat before you put in the bananas. because they brown fast, then mix together, gentle,layer with cookies on top, and if you like whipped cream you can put that on also

Banana Pudding
3-1/2 tablespoon all-purpose flour
1 1/3 cup sugar
Dash of salt
3 eggs, separated
3 cup milk
1 teaspoon vanilla extract
1 (12 oz.) pkg. vanilla wafers
6 medium bananas
1/4 cup plus 2 tablespoon sugar
1 teaspoon vanilla extract
Combine flour, 1 1/3 cups sugar and salt in a heavy sauce pan. Beat egg yolks; combine egg yolks and milk, mixing well. Stir into dry ingredients; cook over medium heat, stirring constantly, until smooth and thickened. Remove from heat; stir in 1 teaspoon vanilla. Layer one-third of wafers in a 3 quart baking dish. Slice bananas, and layer over wafers. Pour one-third of custard over bananas. Repeat layers twice. Beat egg whites (at room temperature) until foamy. Gradually add 1/4 cup plus 2 tablespoons of sugar, 1 tablespoon at a time, beating until stiff peaks form. Add 1 teaspoon vanilla, and beat until blended. Spread meringue over custard, sealing edges of dish. Bake at 425 degrees for 10-12 minutes or until golden brown.
Yields: 8-10 Servings.
