I see this in all his recipes but I'm not sure what he's talking about.
Is it just simply nothing....just more of his jibber jabber talk or is it a real ingredient?

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

You can mix your own - see above, or you can buy a jar in the stores. It is simply a seasoning blend that Emeril likes to use, just as Paula Dean has her "house seasoning".

Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.

Yield: about 2/3 cup

It is a real ingredient, kind of a seasoning salt/creole seasoning. You can get the recipe for it on www.foodtv.com. It is usually attached to the recipes he makes that calls for it.

Its a spice at the store like pepper or salt is. Actually its very very good.

actually i have a thing of it i just bought a few days ago and i'm holding it in my hand right now it's a blend of salt , paprika ,pepper ,garlic ,spices ( which that;s all it said is spices),onion powder,,,,anyway it's great and that's all i can tell you
