Assuming we are talking about old kitchen knives, not "The Murder Weapon", than slide the blade into a piece of corrugated cardboard about twice the width, and half again the length of the blade. Slide it with the corrugations, then when fully inserted, fold the extra cardboard over at the tip, then back over again. Wrap a little tape around it, and it's about as safe as can be expected.
If you want to go all out, and have access to a table vice, and a pair of pliers, you can always snap off 1'' sections of the blade a bit at a time.

I hope you're only asking this because you want to get rid of an unusuable kitchen knife. Break the blade with a hammer into or fold it over a few times, wrap it up so it doesn't puncture your trash bag, and make sure it ends up at the bottom of the trash can.

duct tape it to a board and then throw it in the garbage or use a hammer to break the wood off the handle and throw it in the metal recyclel.

i slide the blade in between layers of corrugated cardboard and stick that inside a box.

wrap it in a towel and suran wrap and throw it away, but a good knife should last you your whole life
