Almonds may be eaten either raw or cooked (blanched and toasted).

Blanching and toasting brings out that rich almond flavor necessary for making sweets, cakes and pastry.

In warm climates, keep raw almonds refrigerated; blanch and toast them as required.

Toasting the almonds brings out the flavor in them. Raw is ok too.

Eat them raw, they are better for you if you do. When they are cooked/toasted it takes out all the good nutrients and makes the oils bad. All nuts should be ate raw, if you are looking for "healthy" foods

Raw almonds are a good substitute for fat, and healthier too. You can toast them, and cook them, but raw is best.

Yeah, you can eat them raw! They're pretty tasty too. I STRONGLY suggest that you wash them first, but there is no need to cook them (unless of course you want to!).
