The other night a a co worker came in to talk to me and asked me what time it was. I told him and then he said " the night is still young". Then he left. What did he mean? was he hinting that he wanted to go do something?

Oh yes, it means that there is still plenty of time to have some fun.
He probably was hoping from some reponse to his quip.
As in, "the night may be, but we aren't". something fun, or 'It sure is, and what do you intend doing about it".
As you probably said nothing, his quip, just died there.
Now that you what he's asking, next time, be ready with an answer for him.

That means , there is plenty og things that you guys could be doing. Depending on how old you are, after a movie you could go to a bar and hang out there, maybe go walk around somewhere local. It all depends. It just means he wants to continue hanging out longer, and not just go home at that moment.
