Honey Sesame Pork Tenderloin
4 servings
1/2 cup soy sauce
1 Tbsp finely chopped ginger root - or - 1 tsp ground ginger
1 Tbsp sesame oil
2 cloves garlic, finely chopped
1 lb pork tenderloin
1/4 cup honey
2 Tbsp packed brown sugar
1/4 cup sesame seed
Mix soy sauce, ginger root, sesame oil, and garlic. Place tenderloin in plastic bag; pour soy mixture over tenderloin. Refrigerate at least 8 hours, but no longer than 24 hours. Heat oven to 400 degrees. Remove tenderloin from marinade; pat dry. Mix honey and brown sugar in shallow dish. Roll tenderloin in honey mixture, coating thoroughly; roll in sesame seed. Place in shallow roasting pan. Roast uncovered 20 - 30 minutes or until meat thermometer registers 140 degrees. Let stand 5 minutes before slicing.
Serve with
Vegetable Fried Rice
3 cups water
1 1/2 cups quick-cooking brown rice
2 tablespoons peanut oil
1 small yellow onion, chopped
1 small green bell pepper, chopped
1 teaspoon minced garlic
1/4 teaspoon red pepper flakes
3 green onions, thinly sliced
3 tablespoons soy sauce
1 (8 ounce) can baby peas, drained
2 teaspoons sesame oil
1/4 cup roasted peanuts

DIRECTIONS:
In a saucepan bring water to a boil. Stir in rice. Reduce heat, cover and simmer for 20 minutes.
Meanwhile, heat peanut oil in a large skillet or wok over medium heat. Add onions, bell pepper, garlic and pepper flakes, to taste. Cook 3 minutes, stirring occasionally. Increase heat to medium-high and stir in cooked rice, green onions and soy sauce. Stir-fry for 1 minute. Add peas and cook 1 minute more. Remove from heat. Add sesame oil and mix well. Garnish with peanuts, if desired.
And For Dessert
Brown Pudding
INGREDIENTS:
2 cups brown sugar
4 cups water
4 tablespoons margarine
1 cup white sugar
1/2 cup margarine
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 cup milk

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). In a large saucepan stir together brown sugar, water and 4 tablespoons margarine; bring to a boil over medium heat.
Meanwhile, cream together white sugar and 1/2 cup margarine in a large bowl, using an electric mixer. In a separate bowl combine flour, baking powder and cinnamon. Blend flour mixture into butter mixture alternately with milk until smooth.
Pour boiling brown sugar mixture into 9x13 inch baking dish and drop flour mixture by spoonfuls into the liquid mixture.
Bake 20 to 25 minutes, or until set.

SALAD, YANKEE POT ROAST AND JELLO!
SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and serve chilled.
Goes great with a glass of iced tea!
YANKEE POT ROAST
Pot roast using the slow cooker
2 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
1 celery stalk, diced
1 onion, diced
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
3 tbsp flour
1 Reynold's slow cooker liner, optional
The slow cooker liner makes cleaning up a snap!
In the crock pot, add the can of cream mushroom soup, a can of water, the lipton dry soup, flour and mix the ingredients well.
Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).
Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender! Serves 2-3
JELLO DESSERT
1 pkg large jello, any flavor
coolwhip
fresh fruit
Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Put the mix in a glass, and top with more fresh fruit or coolwhip.

When I was fairly new at cooking and wanted to impress, I would go to the butcher in the grocery store and ask for stuffed chicken breasts. All you have to do is throw them in the oven and top with some gravy. The stuffing that the store makes is great!
Add some brown and serve rolls and you've got a great dinner.
Another easy side is to cook frozen broccoli. Layer the cooked broccoli in a casserole with Velveeta Cheese and crushed Ritz crackers. Bake until it's hot and melty.

Not very skilled huh? Not a problem.
Rice: Goya. Cheap and I prefer it or Uncle Ben's rice. The kind you throw in the microwave and done in less then 3 mins.
Meat: Go out and purchase a Rotissierre (Spelling is horrible I know) chicken. Its already cooked. Can find it any grocery store - Deli dept. I onion, italian bread crumbs and grated parmesan, celery, and green pepper. Remove white meat and add all the above ingredients. Add some mayo and dijon mustard (2 table spoons). Make into patties and saute in pan for about 3 mins on either side or until med dark brown crust forms on each side. To make them meaty make bigger portions for yourself and bf.
For presentation: apply rice in center of plate as a bed and lay chicken cake on top.
Dessert: Vanilla ice cream or any other flavor, one banana sliced in moons. Sauce pan with brown sugar, butter, put in slices and let saute for about 4 mins. The bananas will become soft and become sweeter. Ice cream in bowl and apply sugared bananas on top.

This is a REAL easy one that tastes great, get some italian crispy shake n bake and chicken, follow the directions on the box, except halfway through cooking flip the chicken (it makes it juicier) and put some spaghetti sauce (I use prego traditional) on top and shredded mozzerella, and cook some spaghetti to put under it when the chicken is dne cooking, and wah-la, instant Chicken Parmesan!!! For desert get some jello no bake cheesecake. All that is fairly easy (and quick) to make, requires "some skill" but tastes great! Good luck!!

fairly easy...but delicious
boneless chicken breast...season to taste
place on some aluminum foil..add onions, bell peppers, mushrooms. fold aluminum so that the juices and the steam remain in the foil. place the foil on a cookie sheet. allow to cook for aprox 30 min.
while that is cooking.. prepare some saffron rice. this rice take approx 20-25 min to cook. This rice has a little kick as well as add color and flavor to you dish.(bright yellow). This will be the base for the chicken
place the chicken over the rice...if you like you could add homestyle chicken gravy to add taste.
place some garnish for professional look
DESSERT
make some brownies.....fudgy
place his favorite ice cream on top and hersheys fudge topping
easy and as you can tell easy clean up.
As you can see that I did use ingredients...be creative. add your own flavor. good cooks don't measure...they create

baked chicken is always easy. season the chicken - maybe lemon pepper - bake at least an hour and a half. buy boxed mashed potatoes, some canned veggies. it looks like it took alot of time and still tastes like old fashioned home cooking. dessert - buy a pie he likes, before you serve it pop it into the micro a few secs then add vanilla ice cream. good luck and remember we all started somewhere.

You can purchase so many varieties of all ready pre-cooked food
and so many varieties of prepared desserts in your favorite super-market section daily.Take them home heat up what you need.Spend more time with your boyfriend instead of cooking.Tell him to make his favorite food list .Pick from the list what he wants every week.Make sure you are on the list as well.
He can pick from your list too as well.You both will have fun in the kitchen.Doing things 2gether.Make each week exciting!

barbeque or gril...(or broil) a couple of steaks, throw a couple of potatoes in the microwave, and throw a salad together...get one of those bag salads....cut up a cucumber and a tomato maybe some kalamata olives and feta cheese....and green onion....more green onion and sour cream for the potatoes....strawberry shortcake is a quick fix....fresh strawberries, chopped, some sugar...let them set, put them in some of those little dessert cups or tear up an angelfood cake you can get at a supermarket bakery, add favorite whip topping.....a good bottle of red wine...zinfandel or merlot would be my choice....whole thing should take about a half an hour to fix.....boom! dinner and dessert!
