Rinsing cools the macaroni. You need hot macaroni to melt the butter to mix with the cheese.

becuz then the cheese wont stick and if the water is in there it will stick on to the mac and cheese and taste way better.

well they like all that crud (starch) on the sides of the pot to be all mixed in to thicken the cheese, & the macs stick together.
