I TOO have that need to drink water after I eat ice cream. It must be the combination of salt and sugar in the ice cream that give you a dry yet sticky presence in your mouth. I guess the water which is the purest form of hydration helps rinse out all that. So you feel a little cleaner in the mouth, those flavors can stick with you for a long time and not in a good way.

I think that you folks are kind of missing the point, which is that ice water after ice cream is so delicious and no one seems to know why. Swenson s Ice Cream parlors in northern California had a good cold water cooler in each store. Won t someone who understands the palate clear this up?

Salt is one of the ingredients of most ice creams. Salt makes you
thirsty.
This is overly simplified, I know, but in all honesty that is pretty
much what happens. Ice cream makes you thirsty on the same principle.
For those with more biology, it all boils down to osmosis.
Osmosis is the tendency for water to travel across a semi-permeable
membrane from a place of low concentration of solutes to a place of high
concentration of solutes.
When you eat ice cream, you blast your body with all sorts of solutes.
Ice cream has salts, but also sugars fats, amino acids, and more for your
body to absorb into the blood stream. When your blood becomes laden with
these chemicals, (mostly sugars) your blood becomes more "concentrated,"
giving your brain (hypothalamus) the signal of dehydration. When water in
the hypothalamus leaves to the blood through osmosis, then the blood
concentration is greater than that of the hypothalamus. This triggers the
thirst response in the body and brain.

That's a good question and you are not the only one as some have suggested.
I don't know the answer to it but divaterry1's answer sounds good. I just know that ice cream does make me thirsty. I think someone else said that maybe it's to get the milky taste of your mouth, that sounds good too.

Because the ice cream has so much sugar in it, the water will take away the extra sugar taste, thus making you not want soda.

It's probably a subconscious need to flush all of the sugar out. I actually am inclined to drink milk after ice cream and donuts, both severely sugared food items. I think it is because there is so much sugar.

the ice cream always makes me thirsty & bloated, so I drink water and then I get a belly ache. I like frozen yogurt better.
