Well, to watch the fireworks, you could go to the Promenade in Brooklyn Heights, though you will have to get there early and it will be packed. However, it will be better than anyplace in Manhattan to watch the fireworks.

A really hot idea (if you can swing it) is to go to a friend's building that has a view of the fireworks from the roof or try to see if you are able to gain access to a rooftop.

Central Park will be nice as well, and I am sure there will be some fireworks there as well (see if Shakespeare will be in the park that day as well).

If you want to near the water, try Coney Island for a day on the rides and watch the fireworks from the piers, and then maybe walk along the beach for a romantic walk at night.
