so simple just melt gentley in pan stilton and double cream, simple tasty and takes 2-3 min...danish blue i find a bit too strong!

This is from my grandmothers cookbook.
Blue Cheese Sauce
This sauce is great with grilled beef or poultry.
3 cups milk
3 Tbsps. unsalted butter
3 Tbsps. flour
1 1/4 cups blue cheese, cut into small pieces
Ground red pepper, salt
Heat milk in medium saucepan over medium heat just until warm, 5
minutes. Melt butter in medium saucepan over medium heat. Whisk the
flour into the butter; cook, stirring, 3 minutes, without letting it
brown (reduce heat if necessary). Whisk milk into the flour mixture a
little bit at a time; cook until smooth and thickened, 2 minutes.
Whisk in the cheese; cook until melted. If the mixture seems too
thick, add a little more milk. Season with ground red pepper and salt
to taste. Keep sauce warm.

BEEF TENDERLOIN WITH PEPPERCORN-STILTON BLUE
CHEESE BRANDY SAUCE
4 pieces of cleaned filet, weighing 7 oz. each
2 tbsp. whole black peppercorn, cracked
4 tbsp. oil
1/4 c. blue cheese, crumbled (Stilton)
3/4 c. heavy cream
1 c. brown sauce
1/3 c. brandy
Salt to taste
Lightly salt the tenderloin, then roll them in the peppercorns, pressing down the pepper into the filets. Heat the oil in a large skillet, until very hot. Add the filets and cook over high heat for 2 minutes on each side or until desired doneness. Lift them out of the skillet and keep warm on serving platter while making the sauce.
Deglaze the skillet with the brandy and let it flambe. Stir in cream and blue cheese, scraping the bottom of the skillet to dissolve any meat glace. Add brown sauce and let reduce until desired consistency. Adjust seasoning. Pour over the tenderloin and serve immediately.

Medallions Of Beef W/Iowa Blue Cheese Sauce
Yield: 1
Ingredients
2 4 oz medallions of beef
-tenderloin
1 tb butter
1 tb finely chopped onion
1 oz brandy; (optional)
3 oz beef gravy or brown sauce
1 tb blue cheese; (softened)
-(maytag
1 ; blue cheese)
1 salt and pepper to taste
1 tb green onion sliced for
-garnishing
2 tb blue cheese for garnishing
Instructions
Melt butter in saucepan. Saute beef medallions to desired doneness.
Remove meat to a warm place. Add chopped onion to pan and flambe with
brandy. Add brown sauce to pan and stir. Add blue cheese and whip til
smooth. Season with salt and pepper. Pour sauce on plate, place meat
over sauce. Garnish the top of each medallion with green onion and
crumbled blue cheese.

The trick is to balance the other flavours of a meal when blue cheese is involved, as it can be very salty. Here's a quickie that you serve in under 25mins.
Cook a pot of pasta shells to your liking without salt, enough for 2 people. Drain, leave to cool slightly in a large bowl while you prepare other ingredients, then add the following:
blue cheese, chopped
your favourite (not too salty in flavour) good quality ham, chopped
two spring onions, chopped
a good dollop of French Dressing
lots of black pepper
a handful of roughly chopped parsley or watercress (stems removed)
Stir, serve and enjoy!
