Parmesan (or the Italian "Parmigiana") literally means "in the style of Parma", an area of Italy. It does not necessarily reflect the type of cheese used.

The pamasean cheese (grated) is mixed in with the breading that goes on the chicken or eggplant. You fry it until brown, and then bake with mozzarella cheese and tomato sauce.

In northern Italy we don't use mozzarella or tomato sauce in our dishes. I never use mozzarella to make parmesan dishes.
