There's so-called 'conventional wisdom' about everything. And when it comes to wine and food, toss the red with meat, white with fish thing out the kitchen window! There are so many different kind's of wine and each of them can be paired with different foods.

Here are some example's and you can pair fish with red wine's

-Grilled salmon, whether hot or cold, pairs up with Pinot Noir-based wines...
-Serve baked halibut and Chianti Classico or try some broiled swordfish with a Spanish Rioja.
-An Shiraz which is a light bodied red wine is a great pair with bbq food's
-One of the most elegant yet simple entrees for a special dinner is a standing rib roast . . . yep, prime rib is served! Prime rib has a soft, melt in your mouth texture and served au jus it's about as good as it gets. A great Cabernet Sauvignon is a great pair with prime rib.
- On a hamburger with swiss cheese & grilled onion? Go Sangiovese. Chianti has a brightness that balances the flavors.

Beef, veal, or pasta dishes with marinara sauce go well. For a real treat try dark chocolate with red wine. The wine brings out roasted flavors in the chocolate that are amazing. One of my favorites!

Everything except fish and dessert (i don't know if "dessert" is correct in English) although some chocolate cakes are great with Porto or Madere for example (I'm French)
