Because Jesus was not all-knowing and unicorns are fantasy. Jesus was just a prophet (religious leader) living two centuries ago, so what would he know about science and evolution. We actiually don't know what Jesus taught about. We have to rely on the gospels, most of which were written many years after Jesus died.

The same reason that He didn't teach us about the Minetaur,or Cyberus,or Aphrodite. They only exist in mythology.Mythology was introduced by the Greeks and the Romans to explain the world around them.That's what happens in a Pagan society.

actually unicorns werre created by bored monks back in the romanesque era. they were originally though to resemble rhino's, but the european monks only had seen horses, so now unicorns made today for profit resemble horses.
