Chicken Rice Casserole
2 fresh, boneless chicken breasts, diced
1 c long grain rice, or use Uncle Ben's
1/4 c frozen veggies like peas and carrots or broccoli
1 can Campbells cream of chicken soup
3 tsp sour cream
1/4 c shredded cheese (ie: cheddar, american)
1 small bag of plain potato chips
Add 1 cup rice to 1 cup water in a pot.
Heat until bubbled and turn to low. Cook for 10 minutes, and then turn off heat. You can skip if using Uncle Ben's instant.
Meanwhile, while rice is cooking...
In a large bowl, add frozen veggies, cream mushroom soup, sour cream, shredded cheese and 1/2 cup water. Mix well.
In a baking dish, add the rice then the chicken pieces.
Then add the veggie mix to the baking dish. Cover mix with 1 small bag of crushed potato chips-- about 1 1/2 cups. Add more cheese if desired.
Cover with foil and bake for 45-50 minutes at 350 degrees.
Test rice before serving. Rice should be soft not hard. If not ready, add 1/4 cup water, mix and bake for 15 more minutes.

fried rice
in a pan saute chopped onion, chopped or grated apple and mixed frozen vegies or chop your own add ready cooked rice and an egg mix and saute a little longer add a dash of salt
Though young kids love running and playing they're lazy when it comes to chewing; fried rice doesn't need too much chewing. They love it. Creamy or pureed soups offered warm in a cup instead of in a bowl with a spoon are also great.
