in my opinion it was largely done because of health issues. pigs, for example, can carry trichinosis which the people didn't know about at that time nor did they know how to cook the meat so that this wasn't a problem.
But regardless of what God's reason was, after Christ's death the idea of clean and unclean animals was repealed:
Act 10:9 The next day about noon these men were coming near Joppa. Peter went up on the roof of the house to pray
Act 10:10 and became very hungry. While the food was being prepared, he fell sound asleep and had a vision.
Act 10:11 He saw heaven open, and something came down like a huge sheet held up by its four corners.
Act 10:12 In it were all kinds of animals, snakes, and birds.
Act 10:13 A voice said to him, "Peter, get up! Kill these and eat them."
Act 10:14 But Peter said, "Lord, I can't do that! I've never eaten anything that is unclean and not fit to eat."
Act 10:15 The voice spoke to him again, "When God says that something can be used for food, don't say it isn't fit to eat."

The animals that are unclean--clean the wastes of the earth; they're here to clean the garbage. We can use them for our need too.
The clean animals were here too: for eating and using them for our need.

Unclean animals were created to be scavengers. They eat the refuse of Earth and God declared them unfit for human consumption. When God delivered Israel out of Egypt, He wanted His people to be a healthy nation. So, God gave them dietary restrictions that were based on His design and creation, and forbade the eating of unclean animals. (Leviticus 11) Even though the laws of Moses were discontinued at the cross (Colossians 2:14; Hebrews 7:12), unclean animals are still scavengers and remain unfit for human consumption. The consumption of unclean food is not an unpardonable sin, but it is foolish to rebel against God’s wisdom. God wants His children to enjoy good health and long life. Since diet affects our well being, God has generously revealed what is good to eat and what is not. Paul refers to the body as God’s temple, therefore, we should be thoughtful about our diet! (1 Corinthians 3:16,17)

There is no such thing like clean or unclean animals. It is just one's perception or believe. Otherwise, those unclean animals will all die of diseases in the matter of time and eventually extinct. Then what we see now, needless to say, must be clean animals!

Everything God made is good, the Bible says. However, when it comes to eating he made reference to clean and unclean to show the distinction of what is acceptable and healthy for our bodies and what is not. They were not made unclean - they are unclean to eat. It remains today we should take care of our bodies and God knows best.

God has basically always had a health code for His followers. I believe these laws have at least two purposes: (1) they protect us from unhealthy or dangerous substances and (2) they help us to learn to bridle our appetites and be more obedient and humble.
