I use flank steak to make beef fajitas...a pound and a half steak is perfect for 4 people. I make a marinade in a plastic zip top bag with 1/2 a bottle of beer, a 1/4 cup vegetable oil, 2 limes (juiced and their skins thrown into the bag), a handful of cilantro, and 2 packages of McCormick mesquite marinade mix. Put the steak in the bag and squish it around. I leave it in the fridge all day or if I want it to be quick, leave it on the counter for about 1 hour. Grill, broil, or pan sear the steak and cut it across the grain. Serve with tortillas, guacamole, cheese, or whatever you like. If you grill the steak, you can also throw some onions and peppers on the grill at the same time. Works great with chicken as well!

My wife makes the best fajitas I've ever tasted, but she's not here right now so I can't give you the recipe. They are really wonderful. By the way, she's Pennsylvania Dutch.

1 family pack of boneless, skinless Chicken, cut into cubes
2 bottles of Kikkoman's Teriyaki glaze (yes, it is a fajita recipes)
2 packages sliced mushrooms
2 green bell peppers
1 red bell pepper
1 yellow bell pepper
2 onions thickly sliced

Marinade cubed chicken in 1 bottle of teriyaki glaze for 1 hour.

Heat wok and pour 2TBSP of Extra Virgin Olive Oil in wok. Add chicken, stirring occasionally. Let cook about 5 minutes and add mushrooms, stirring occasionally . Cook another 5 minutes and add peppers, onion, and the other bottle of teriyaki glaze, stirring occasionally. Let everything cook for another 10-15 minutes. Serve with warm tortillas, sour cream, guacamole, and salsa.

It is different, but yummy. This serves an insane amount of people. You can always cut it down.

Buy beef skirt with the skin on. get grill to high heat. Marinate skirts with white and black powdered fajita seasoning. Available at most stores. Marinate for about 10 to 15 mins. Add skirts to high heat until thoroughly charred. Flip and repeat. Remove skirts and cut off skin, should be fairly easy if charred well, Return to med high heat, reseason, and cook for about 15 mins each side. remove and let rest. Cut against the grain, and enjoy.
