No venison or buffalo recipes. The local place has for purchase: pheasant, rabbit, goose and lamb. Slow cooker recipes are especially welcome! Also, any other non-traditional items (not chicken, pork or beef) are welcome - but remember, I would have to be able to find them for purchase, so nothing *really* out there. Thanks!

Indian Goat Curry

Ingredients:
1-1/2 pound best-quality lamb, mutton, or goat 1 large onion, peeled and chopped 4 garlic cloves, chopped
2-inch piece fresh ginger, chopped 4 tablespoons vegetable oil 3/4 to 1 cup water
1 green bell pepper, seeded 4 tomatoes 4 slices fresh or canned pineapple
1 tablespoon brown sugar salt to taste SPICES 1 (GROUND): 1 teaspoon turmeric
1 teaspoon coriander 1 teaspoon cumin 2 teaspoons paprika
SPICES 2 (WHOLE): 1/2 teaspoon coriander seeds 3 green cardamoms 1 teaspoon black peppercorns
2-inch piece cassia bark or cinnamon stick

Instructions:

1 Cut the meat into 2-inch cubes discarding unwanted fat and gristle, etc. Wash it and let it dry.

2 Fry the onion, garlic, and ginger in the oil until golden.

3 Make a paste of spices 1 with a little water and add to the onions. Fry for another 10 minutes, stirring continuously. Add water to keep it from sticking.

4 In a casserole, combine the onion, spices 2, the meat and 3/4 to 1 cup water. Cook in a preheated 375 F oven for 30 minutes.

5 Add the remaining ingredients and salt, stir well, and cook for another 10-15 minutes. Serve with brown rice and wedges of lemon.

The rabbit can be cooked any way you cook a chicken.

Pheasant Mulligan
2 hens
2 cups diced carrots
1 cup finely chopped cabbage
1 cup diced onions
2 Tbsp. butter
2 cups diced potatoes
salt & pepper to taste

Cover with water, tomato juice or V8 and simmer until all are done. In a crockpot cook on hi for about 4 hours then turn to low for another 5 hours.

The goose can be cooked the same as the pheasant only add 1/2 clove garlic, pulp of 2 seeded tomatoes and 1/2 cup rice instead of the potatoes.

The lamb can be marinated and made into shish kabobs or use the same recipe as above with the potatoes for lamb stew.

Rabbit and lamb in Puerto Rico are cooked in fricase. Like stewed with potatoes and beer.

Just substitute the non-traditional meats for traditional meats in your favorite recipes like stew, smothered, stir fry, soups, burgers, kabobs.
