I just got a 1/4 side of beef and never ordering one before I did not know how much hamburger I would get. I bet I got 75# of hamburger and am looking for different recipes. Other than hamburger patties, chili, spaghetti, and tacos does anyone have any good ideas so I can have a variety?
We're not real picky eaters but I do try to stay away from the same thing over and over.

now i do have a recipe that my mom and i used to do

You will need a muffin pan
a roll of basic biscuits (the cheap like 3 or 4 for a dollar ones, nothing expensive or fancy)
taco seasoning
garlic powder or salt
salsa
cheddar cheese (or anything that goes well with taco flavor)
and of course hamburger meat lol

...brown your hamburger..amount depends on how many your feeding ofcourse...but put in some taco seasoning and garlic powder or salt to taste...
now spray your muffin pan with cooking spray to prevent sticking...
take the biscuits and individually gently stretch them out a little and place them in individual muffin holes...making like a pocket...spoon a small amount of taco meat dont put too much or it will bake over lol
top with cheese and bake like 10 minuts if not a little less basically till the biscuits brown and the cheese melts and serve with the salsa...getting the biscuits right without ripping them can take a little practice

but i made these once for a bunch of friends and they loved

you can alter it some for different tastes..like add green chilis or you dont have to use taco if you want you could do like italian and a little spaghetti sauce and make them italian...

Tamale Pie

1 lb hamburger
1 onion, chopped
1 can green chilies, chopped
1 4 oz can sliced olives
1 can corn drained
1 can either black or kidney beans, drained and washed
1 package taco seasoning
I package corn bread mix
shredded cheddar cheese

Brown hamburger and onion. Add the taco seasoning and the amount of water specified on the package. Add corn, olives, chilies, and beans. Place in an oven proof pan.

Mix corn bread mix per package directions. Pour over meat and bake according to package directions. Top with cheese last five minutes of baking.

Meat Loaf Muffins
2 lbs hamburger
1 package Stove Top (any flavor works)
1 egg
1 t garlic powder

Mix all ingredients. Place meat into 24 greased muffin tins. Make a small well in the middle of each muffin. Add a small amount of barbeque sauce. Bake at 400 for 20-25 minutes. Top with cheese the last 5 minutes if desired.

My daughter also loves Porqupine Balls

1 lb hamburger
1 cup cooked rice
1 egg
2 cans tomato soup
worchestershire sauce

Mix hamburger, egg and rice. Season with salt and pepper. Brown meatballs in a skillet. Add soup and worchestershire sauce to taste. Cook 20 minutes or until meatballs are done. Add a small amount of water if sauce becomes too thick.

Serve over rice.

Have you made the Cheeseburger Pie recipe from the Bisquick box? It's what I make when I can't think of anything else or I'm tired of chicken, or I just need something easy and quick to make. I'm reciting this from memory, so you might want to check the Bisquick box or website before you buy your ingredients to make it!

Preheat oven to 400 degrees. Spray a pie plate with Pam.

Brown 1 lb. ground beef with one medium chopped onion until done. Drain grease and stir in 1 teaspoon salt. Sprinkle beef/onion mixture into pie plate. Top with 1 c. shredded cheddar cheese. Mix 1 c. milk, 2 eggs and 1/2 c. Bisquick and pour over meat/cheese. Bake 25 minutes uncovered.

Put some cheese and bacon inside the hamburger pattie. Also try topping them with things you see on your favorite restaurant menus.
I remember, when I was little my mom used to put cole slaw as a topping in hamburgers. And the taste was incredibly good!!

I have one I especially like and its beyond simple, fry up the hamburger in a sauce pan add a block of cubed velvetta cheese, a can of cream of mushroom soup, and a can of mushrooms and melt it all together fill into pita bread and serve it is so good you can add a little garlic or pepper to taste

I go to a meat market and get a lot of meat too. All I can tell you is I cook it up, drain, cool and freeze it cooked. That makes it easier to deal with. Go to www.allrecipes.com for some very easy and fast recipes.

Here are some that I do with my family of 6. All 4 of my kids are different eaters: beef nachos, spaghetti sauce for frozen cheese ravioli's (cheese section of your grocery store), beef strogonoff, vegetable soup w/ABC noodles, lasagna, baked ziti.

Raising 3 kids by myself for over 15 yrs, I have 'invented' many filling (and my kids say nummy) meals using hamburger. Send me an e-mail and over the next day or so, I will send you some.

try beans (bush, van camp, whateer u like) and put the hamburger in. you can also try hamburger mixed with barbecue sauce a lil ketchup. after its cooked and mixed stuf it in a biscuit and bake it. sprikle a lil cheese on it. BARBCUE CUPS!

Southwestern Taco Pie

1 pound lean ground beef
1 (1.25-ounce) package Taco Seasoning Mix
1/3 cup water
1 tablespoon oil
1 (1-pound) package frozen green, red and yellow peppers and onions*
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 (11-ounce) can whole kernel corn, drained
1/2 cup salsa
1 (15-ounce) package refrigerated pie crusts, softened as directed on package
8 ounces (2 cups) shredded cheese recommended: Colby/Monterey blend or Mexican blend
Garnish:
Sour cream
Taco Sauce


Preheat the oven to 400 degrees F.
Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain. Add taco seasoning mix and water; mix until ground beef is well coated.

Meanwhile, heat oil in large saucepan over medium high heat until hot. Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally. Remove from heat and drain excess liquid. Add garlic and onion powders, salt, pepper, corn, and salsa, stir well and set aside.

Prepare pie crusts as directed on package for 2-crust pie using 9-inch glass or metal pie pan.

Combine salsa and corn mixture with ground beef; mix well. Sprinkle 1/2 cup of cheese evenly in bottom of crust-lined pan. Spread 1/2 of beef mixture evenly in pan over cheese, pat down. Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture, pat down, top with remaining 3/4 cup cheese. Top with second crust and flute; slit in several places.

Bake for 30 minutes or until crust is golden brown. Cover edge of crust with strips of foil or a pie crust shield after 15 minutes of baking. Let stand 5 minutes before serving. Store in refrigerator.

Garnish with a dollop of sour cream and a drizzle of taco sauce. Also recommended: guacamole, salsa, and diced green chiles.

* If using fresh peppers and onions, use 1 1/2 cups chopped onions and 2 1/2 cups chopped peppers and increase prep time and stove top cooking time.
