I just got married 2 weeks ago at a park overlooking the water and it even had a little sandy beach. His parents made an arch out of bamboo. The guys wore hawaiian shirts, khakis, and flip flops. I wore a knee-length, white, simple dress and white flip flops. And the girls were in knee-length, yellow skirts and white flip flops. We did the ceremony outdoors right near the water, and we got lucky with beautiful weather (it was supposed to rain and it didn't) and there was a nice breeze. The reception was indoors, the park had a building for that. Publix made the wedding cake but I bought shell shaped candies to be placed on it. And the centerpieces were betta fish in a glass vase with a plant in it. And our favors were sanddollars with our name and date written on them and little candles made out of gel with small seashells in them. Everything was beautiful, yet simple. You don't want to go overboard on elegance when you have a beach themed wedding. And you have to be careful having the ceremony and reception outdoors, the weather is too hard to predict and I live in Florida so you have the heat and the insects that come out as darkness approaches.
