Things that you two are interested in. If your date likes lets say camping and other outdoorsy stuff then I say talk about that. But if they hate art then do not talk about Picasso or Van go. Find out what they like and be interested in them (do not do all of the talking). Give them compliments and most of all be friendly and nice. Do not joke around with insulting stuff though because that will not help you at all.
