how can you make fried rice taste like that as opposed to darker fried rice? how can you achieve the perfect yellow color like in chinese restaurants?

Yang Chow Fried Rice Recipe #118568

This fried rice has no soy sauce...a delightful change..Be sure and use rice that has been cooked and thoroughly cooled.

1 tablespoon light sesame oil
1 tablespoon minced fresh ginger
4 garlic cloves, minced
1 small red bell pepper, finely diced
1 small red onion, finely diced
1 cup frozen peas
1 cup diced ham
1/2 lb shrimp, peeled deveined (16-20 count)
3 eggs, beaten and scrambled in large curds
4 cups cooked jasmine rice
2 scallions, white and green parts, thinly sliced
1 teaspoon Chinese five spice powder
1 teaspoon kosher salt
2-4 teaspoons dried red chilies or szechuan peppercorns
1/2 teaspoon cracked black pepper

6 servings Change size or US/metric
Change to: servings US Metric

35 minutes 20 mins prep

1. Place a wok or large skillet over medium-high heat and when it is hot, add the oil.

2. Add the ginger and garlic and cook until lightly carmelized, about 1 minute.

3. Add the bell pepper, and red onion and cook for 2 minutes.

4. At this point, I add the frozen peans, ham and shrimp and cook, stirring constantly -- for a couple of minutes.

5.Then I add the eggs and rice and keep moving ingredients around.I never leave the rice stick to the sides of the pan.

6. Then you can add the scallions, spices, salt and pepper, continuing to stir until heated completely 4-6 minutes.

7.Serve immediately.

Found this link and LOVED the name of the website and the picture of the YANG CHOW FRIED RICE!

There are at least half a dozen variations of Fried Rice in China. Besides the basic ingredient of rice, other items such as egg, prawns, chicken, mushrooms, bamboo shoots and green peas etc can be added singly or in various combinations as desired.

You would need:
225g/8oz long grain rice
100g/4oz cooked meat (chicken, ham or pork)
1 spring onion, finely chopped
2-3 eggs
1 tbsp salt
3 tbsp oil
50g/2oz green peas
50g/2oz of peeled shrimps
1 tbsp rice wine
1 tbsp Light Soy Sauce


1. Cook the rice well in advance so that it is cold before frying. (What they don't say is that rice should be cooked and then put in the fridge. You can take it out to get to room temp a few hours before you make the fried rice..)

2. Dice the meat into small cubes about the size of the peas. Finely chop the spring onion. Lightly beat the eggs with a pinch of salt and a few pieces of spring onion.

3. Heat half of the oil in a very hot wok or frying pan and stir fry the peas, prawns and meat for about 1 minute, then add the wine and soy sauce, continue stirring for another minute, remove and keep warm.

4. Heat the remaining oil and lightly scramble the beaten eggs. Add the cooked rice and stir to make sure that each grain of rice is separated, then add salt and spring onions with the cooked mixture. Blend well and serve hot or cold.
