Ice Cream Sandwich Cake~~
12 ice cream sandwiches, softened
1 large Cool whip
1 small Cool whip
Caramel syrup
Chocolate syrup
Crushed Heath or Butterfinger bars or M&M's or other candy
Chocolate Chips
Nuts (optional)
Layer six sandwiches, pressing down a little. Then layer small Cool Whip, then drizzle chocolate and caramel syrup over. Sprinkle candy bar bits and chocolate chips (and nuts, if desired) on top. Repeat layers.
Yummy~~~
...And there's always fruit and cheese. My favorites? Pears or bananas with gorgonzola; very ripe plums with smoked gouda; strawberries with Grand Marnier-spiked sour cream and orange zest.
Or fresh fruit dip, nuke some semisweet chocolate chips in the micro, mix with a little milk, and dip fresh fruit in.

ANGEL FOOD CAKE
1 cup cake flour
1 1/2 cups white sugar
12 egg whites
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cream of tartar
1/2 teaspoon salt

DIRECTIONS:
Preheat the oven to 375 degrees F (190 degrees C). Be sure that your 10 inch tube pan is clean and dry. Any amount of oil or residue could deflate the egg whites. Sift together the flour, and 3/4 cup of the sugar, set aside.
In a large bowl, whip the egg whites along with the vanilla, cream of tartar and salt, to medium stiff peaks. Gradually add the remaining sugar while continuing to whip to stiff peaks. When the egg white mixture has reached its maximum volume, fold in the sifted ingredients gradually, one third at a time. Do not overmix. Put the batter into the tube pan.
Bake for 40 to 45 minutes in the preheated oven, until the cake springs back when touched. Balance the tube pan upside down on the top of a bottle, to prevent decompression while cooling. When cool, run a knife around the edge of the pan and invert onto a plate.

Tropical Delight Cake
Cake:
1 Box Yellow Cake Mix (Do not use the box directions)
4 Eggs
1 cup Vegetable Oil (Do not use olive oil)
1 can Mandarin Oranges
Topping:
8 oz Cool Whip
1 large can crushed Pineapple
1 pkg small Instant Vanilla Pudding
In a large bowl combine cake mix, eggs, oil, mandarin oranges, mix well. Bake at 350 F, 25-30 minutes.
Let cool completely.
Let Cool Whip thaw on the counter. Mix it up well with pudding mix so it dissolves well. Add pineapple and its juice. Mix well. Spread on cooled cake.
Sprinkle top of cake with coconut, chopped nuts and/or maraschino cherries.
Stored covered in refrigerator.

I don't have a name for this, but it's been a hit in the past. You could substitute vanilla for the lemon, if you wanted it to be red, white and blue for the 4th. It's light, easy, and doesn't require baking.
Angel food cake cut into pieces
1 container of cool whip
1 pkg. of instant lemon pudding
fresh or frozen berries (blueberries, raspberries, strawberries, blackberries, or some combination thereof)
Make the pudding and combine it with the cool whip until well mixed--it should be very light and fluffy. Then you just layer: pudding/whip, cake, berries, pudding/whip, cake, berries in a deep dish (a trifle dish is best) until you reach the top.

Jello, coolwhip, fresh fruit.
You can make it ambrosia style. Make the jello as on the package but use less water. Add fresh fruit like grapes, cut strawberries, even bananas or bit sized apples. Let it gel for at least 5 hours.
Mix up the jello and add 1/4 tub of coolwhip. Mix well.
Place in serving cups and garnish with a dollop of whip cream, more coolwhip or more fresh fruit.

Strawberry, pretzel salad. On first glance this probably doesn't sound too great but I've never met someone who didn't rave over it. It gets 5 stars on Allrecipes.com!
INGREDIENTS:
3/4 cup butter, softened
3 tablespoons brown sugar
2 1/2 cups crushed pretzels
1 (6 ounce) package strawberry flavored gelatin
2 cups boiling water
3 cups strawberries, chilled
1 (8 ounce) package cream cheese
1 cup white sugar
1 (8 ounce) container frozen whipped topping, thawed

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Cream butter or margarine with the brown sugar. Mix in the pretzels and pat mixture into the bottom of one 9x13 inch baking pan. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Set aside to cool.
In a medium bowl, dissolve the gelatin in the boiling water and stir in the strawberries. Chill until partially thickened.
In a small bowl beat the cream cheese and white sugar together until smooth. Fold in the whipped cream. Spread mixture over the top of the cooled crust, making sure to seal the edges. Chill then pour the gelatin mixture over he cream cheese layer. Chill until firm.

A nice summer fruit parfait. Just grab some Cool Whip, fresh strawberries(or whatever fresh fruit you like), and layer the whipped cream and fruit in cups. It's delicious and refreshing.

Twinkies layered in a glass dish- top with straw berries that are crushed with enough sugar in them to make them lightly sweeter than plain-now put some bluberries on top of all that.Really good and travels well to the park.(be sure to have a dish with a good lid)

Perfect Berry Shortcakes
INGREDIENTS:
For shortcakes:
2 cups all-purpose bleached flour
1/2 teaspoon salt
1 tablespoon baking powder
5 tablespoons sugar, divided
1/2 cup butter, frozen
1 egg, beaten
1 egg white (optional)
1/2 cup cold half-and-half
To assemble:
1 (16 ounce) package unsweetened frozen raspberries, blackberries, blueberries or strawberries, thawed and crushed
12 ounces fresh raspberries, blackberries or blueberries (rinsed and patted dry), or strawberries (hulled and sliced)
7 tablespoons sugar, divided
1 cup chilled heavy cream
1 teaspoon vanilla extract
DIRECTIONS:
Adjust oven rack to lower-middle position and preheat to 425 degrees. Mix flour, salt, baking powder and 3 Tbs. sugar in a medium bowl. Grate 2 Tbs. of the butter on the coarse holes of a box grater into dry ingredients; toss to coat. Repeat grating and tossing with remaining butter. Combine egg and half-and-half; pour into flour mixture. Toss with a fork to form large clumps. Lightly press clumps into a ball; add a teaspoon more half-and-half to the bowl if dough won't come together.
Turn dough onto work surface; press into an 8-by-4- to 5-inch rectangle. Cut into 6 squares, placing them 1 inch apart on a small baking sheet. (Can be refrigerated up to 2 hours before baking.) Before baking, brush tops with optional egg white for a particularly attractive sheen. Sprinkle with remaining 2 Tbs. sugar. Bake until golden brown, about 12 to 14 minutes. Let cool until warm, 5 to 10 minutes.
Mix thawed and fresh berries with sugar in a bowl; let stand until sugar dissolves. With a hand mixer, beat cream to soft peaks, gradually adding 1 Tb. sugar, then vanilla.
Split each cake crosswise; spoon a portion of berries over each cake bottom, then a dollop of whipped cream over berries. Cap with cake top and serve immediately.
