One: We should wait until your father comes home to eat dinner.
Two: We should wait to eat dinner until your father comes home.

Either can be correct; it depends upon what you are trying to say. The sentences mean two different things. The first means that the persons waiting are going to do so until the father comes home for the father to eat dinner. We do not know what the waiting people are waiting for, though (e.g. wait to play your video games until after your father comes home to eat his diner),

The second sentence means that the waiting people will not have dinner until the father gets home, regardless of when the father has dinner.

i think it's "Two". ..only because i'm a tech writer and my boss reprimands me for using prepositional phrases to finish off my sentences.
