I had this problem few weeks ago. here's a step by step

Cut the skin off, then make cross cuts on the mango, like a checker board. Then cut down against the seed.

Take you sharp knife and let is 'slide' down the side of the pit. Do that to the other side (you will have two boat looking pieces). Then cut off the rest of the 'meat' -- the pit is large, so you won't get lots of fruit. Then, remove the skin and cut to desired pieces. Bonus -- as the 'chef' you get to chew / suck on the fruit remaining on the pit - tastes great and you feel like a kid for a couple of moments!! Have fun.

Well I slice it in three to get the seed thing out, and then I take the halves and cut them horizontally then vertically so I have little cubes sticking out and i push the mango out and eat it. =).

Peel the skin and cut two sides for big pieces and the rest for two small pieces. If it is of small size and ripe, you can cut in the middle around it and twist the top out and you can scoop the meat with spoon on both cups.

Cut it in half lengthwise around the seed in the middle. If it's really ripe, you should be able to peel the skin off of it. After that, slice up the flesh of the fruit.

I usually wash the rind, then hold it in one hand and "shave" off slices with a paring knife, until it gets too fibrous (close to the seed) to be tasty anymore.
