If you're both 18 (or 17 in Texas) you are legal adults and can get married any time you wish.
In Georgia, if the girl is pregnant, the couple can get married before the parents are notified as young as 14. I DO NOT recommend this, but it's the great lawmakers of the south ..... yeah right.
If your mom is trying to control you, you need to decide how much you depend on her and if you can support yourself, you need to put the foot down NOW before she tries to break up your marriage.

Well Rebecca, is the question, "Can my fiance and I get married? We are both of age, but we have guardianship." The answer depends on the state in which you reside. I assume most states require a person who is older than the legal age to be married, but in the care of a guardian to provide a signature of the guardian in order to be married. I'm quite sure that someone else's guardian's signature wouldn't help you. If you can't write a simple sentence very well, than you ought stay in high school and learn English. Perhaps after finishing high school you will be able to obtain a good job. You wouldn't need your mom's signature to get married then either.

if you are over the age of 18 (19 in Alabama), then you are legal to do anything you want to do. Your mom would not have control. If you are under that age - then no your actual guardian (parent or legal appointed one) would have to sign for you. Don't rush into things though... there is no difference in the amount of love you two share with or without a legal document.

If you're both of legal age, you don't need your parents to sign anything. The best thing to do is go the place you get the marriage license and ask them.
