I buy several potatoes from the hypermart nearby to cook my own home-made french-fries. To my surprise, some potatoes are green and the others are not... what is this all green appearance actually? Can we still eat them?

The answer is a bitter-tasting chemical called solanine. Solanine is produced when the potatoes are exposed to sunlight. Even fluorescent lighting at the supermarket can make them turn green.
As potato plants grow, we hill them by pulling up additional soil around the plant. This enables the tubers to develop and expand, and prevents them from poking through the soil and turning green from the sun. Heavy rains can uncover potatoes near the surface, so it's a good idea to check your potato crop after a storm.
Solanine is toxic if consumed in large quantities, so cut away and discard any green portions of potato before you cook with them. When storing potatoes, be sure to keep them in a place where they won't be exposed to light. Throw them away!!!

The greenish hue is actually chlorophyll, but it is also an indicator that an alkaloid, called solanine, may be present under the skin of the potato. Solanine develops in potatoes when they are stored in the presence of light (which also encourages chlorophyll formation) and either at very cold or quite warm temperatures. It is toxic, however it would take a very large number of green potatoes to make you ill
Since solanine collects just under the skin, it is safe to peel away the skin and a thin layer of white flesh before you cook the potato.

You need to cut away the green part of the potato, because yes the green part of the potato is indeed poisonous. You would have to eat alot of the green to be affected, but it's not a good idea to eat any of the green part.

I've never seen a green potato, but I'm guessing that it's probably not a good idea to eat them.

You can cut green portion and use the rest or throw the whole potato away in garbage.

my husband is a chef, and he said they are fine to eat. usually they taste the same; however, you do get a few that has a wierd taste!

the green is alkaline, it is poison, but you have to eat a lot to get sick
