This is an awesome recipe that I saw on the Food Network and I've used it ever since...
2 cups mashed potatoes
1 large egg, beaten lightly
6 tablespoons all-purpose flour
11/2 tablespoons grated onion
2 tablespoons chives
Salt and pepper
Vegetable oil, for frying
Preheat oven to 250 degrees F.
In a bowl combine well the potatoes and the egg, stir in the flour thoroughly, and stir in the onion, chives, and salt and pepper, to taste.
In a large heavy skillet, heat 1/8-inch of the oil over moderately high heat until it is hot but not smoking. Fry heaping tablespoons of the potato mixture, flattening them slightly with the back of the spoon, for 1 minute on each side, or until they are golden brown. Transfer the pancakes as they are cooked to paper towels to drain and if desired, keep them warm on a rack set on a baking sheet in a preheated 250 degree F oven. Serve the pancakes as an accompaniment to meat, poultry, or eggs.

I got a good recipe from Rachael Ray of the Food Network for leftover mashed potatoes. All you do is put them in a pan until they turn brown on the bottom(do not stir or move them around, just let them sit), and then turn it over so it looks like a half circle. Cut into wedges and enjoy! You can also add toppings into them like bacon and cheese, or some chives. Whatever you like!

shepherd's pie!!!! My mom used to make it with leftover mashed potatoes and can veggies (instead of gravy) and made a bisquick or phisbury top so that it always looked like a pie and tasted FANTASTIC!!! (she also always used ground beef)
A shepherd's pie recipe with beef.
INGREDIENTS:
2 cups cooked chopped meat
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter
PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes.
Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.
This shepherd's pie recipe serves 4.

I've made my own sort of hashed brown type breakfast potatoes out of left over mashed potatoes.
In a skillet add 1 tsp oil. or leftover bacon grease. Ok, bad for you but taste so good!
Add some diced onions, sautee for 2 minutes. Remove.
Add the leftover mashed potatoes, grill on med/low. Add the grilled onions. Add a dash of herbs like rosemary, dill, etc.
Sautee for 2 or 3 minutes, turn over or mix if necessary. Serve hot.

you could make shepard's pie...cook up some hamburger. choose a size dish depending on how much potato you have left...
put the hamburger on the bottom, add some kernel corn, and then top with the mashed potatoes. stick it in the oven at 350 until it starts to bubble. the time it is in the over for will vary depending on how big a dish you are using.

Actually - potatoe pancakes are made from "shredded" potatoes - not mashed. Believe it or not - it makes a difference.

Take your left over potatoes and do a quick potatoe salad- wash and rinse one can mixed veggies- add green onion-dillpickles-squirt of mustard-black olives-real mayo to stir up-dash of the pickle juice-BAM QUICK POTATOE SALAD!!(enjoy)
