and can someone give me recipes for icing and frosting that is easy to do. i love working on boiled icing, maybe can someone give me another recipe for it, that has been tested. thanks

The link below is like an online course in cake baking & decorating. Very useful & informative!

You can also take classes locally. Most cake & candy supply stores offer Wilton classes as do some of the large national craft store chains (Michael's, Joann's, etc.) Sometimes community colleges even offer courses in cake decorating. However, I think practicing is really the key. Basic techniques aren't really that hard; it just takes some practice to get a feel for working w/the frosting. Good luck & have fun!

First, the link below is to the Wilton company---the holy grail of cake decorations...they're famous for their shaped cake pans. Even if you just look at the home page for a second, you'll see a great way to decorate cupcakes for the 4th of July.

From the same site, here's a recipe for boiled icing...

Fluffy Boiled Icing

Ingredients:

* 3 Tablespoons meringue powder
* 1/2 cup cold water

Syrup:
Ingredients:

* 2 cups granulated sugar
* 1/4 cup corn syrup
* 1/2 cup water

Beat meringue powder and cold water until stiff, about 4 minutes. In microwave safe bowl stir sugar, corn syrup and water. In microwave bring syrup mixture to a boil (approx. 5 minutes). Remove, let mixture cool slightly (1-2 minutes). Then slowly add syrup to meringue mixture. Beat on HIGH for 4 minutes.

YIELD: 8 cups.

For top of range: Mix sugar, corn syrup and water in 2 qt. saucepan. Bring to boil; cool slightly and follow directions above.

The last link is to one of my favorite recipes sites because it lets the cooks who make the recipes vote on then so if enough people have voted, you know it's a good recipe. (Can't get past their home page--their server must be down--I'll try again later and post the exact link..)

Finally, try looking in VERY old cookbooks--pre 1940. The have amazing recipes for icings and frostings, just ignore the ones using lard.

I do not have a suggestion for you. However, I did want to say this. I have learned everything on my own by practicing. So some things that may work for may not for you. I am also a beginner. So all I wanted to do was encourage you to keep practicing and soon you will become a great cake decorator! :)

7-Minute Frosting

2 egg whites
1 cup granulated sugar
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1/4 cup water
1 cup Marshmallow Crème
1 teaspoon vanilla extract

Combine all ingredients except vanilla extract in the top of a double boiler. Place over boiling water. Beat until soft peaks form.
