Once a jar of mayo has been opened, it must not get to room temperature and then refrigerated or it will spoil and make you sick. However, if it hasn't been opened, it can remain un-refrigerated until you open it. Once opened, refrigerate it immediately. Mayo spoils fast and will make you extremely sick if eaten if left open for more than 24 hours.
