A man of character?
At a mimimum such a man is a friend, a caring person, capable of thinking of others before himself. Add to this that the man must be be loving, giving and able to make sacrifices.
It helps, too, if the man is honest with himself and others.
The biblical qualities of love, joy, peace, kindness, goodness, faithfulness, gentleness and self-control round out the man's (or any person's ) character.

Always tries to do the right thing
Stands up for what he believes in
when he makes a mistake he takes responsibility and tries to fix it without hurting anyone
lives a principle driven life
this is also what makes a woman of character

This is by no means a definition...
but one characteristic of a man (or woman) with character is this person does kind things with no expectation of reciprication and this person doesn't go around telling other people what he (or she) has just done or what a good person he (or she) is.
